


100 g sourdough starter (or whatever your discard amount is!)

2 Eggs

1 cup cooked peas

Chives

Parsley

1/2 Lemon

Olive oil

Salt

Pepper

Satay sauce (recipe on my page) or a chilli crisp is great too
Make sure the pan is hot and add some olive oil (preferably a lighter color olive oil, not extra virgin).
Pour in the sourdough starter and rotate it around the pan.
Add chives and some more olive oil on top, along with salt.
Prepare the herby smashed peas by mixing cooked peas with chives, parsley, and juice from half a lemon. Smash with a fork or blend until desired consistency is reached.
Season the herby smashed peas with salt and pepper.
Fry the egg and season with salt and pepper.
Serve the sourdough starter pancake topped with satay sauce, herby smashed peas, and egg.
