


150 g Smoked salmon

1 cup frozen peas, cooked in boiling water and salt until soft and set aside

1 pinch salt

1/2 lemon juice

1 tsp black pepper

1 1/2 Tbsp extra virg olive oil

3 Tbs Parmesan finely grated

1 clove garlic crushed

2 Tbsp mint leaves

1 Packet of biscuits or a baguette sliced and toasted
Make the pea purée by combining all ingredients in either a food processor, blender, or a bowl and blitz using a hand blender.
Taste for more acidity (and add lemon), salt or pepper and add more!
Get your three layer stack going well. Crispy bread, pea purée, salmon.
