


1 1/2 cups rolled oats

1 cup plain flour
3/4 cup desiccated coconut

3/4 cup caster sugar

1/2 cup golden syrup

175 g butter

1 heaped tsp bicarbonate soda

1 Tbsp flakey salt
Oven to 160c (donβt want it too hot!)
Mix all dry ingredients in a large bowl
Melt butter and golden syrup on low heat until browned
Add bicarbonate soda while hot but off heat and stir constantly while it foams up
Add to the dry mix with a pinch of salt
Ball up your cookies and SPREAD them out on a lined oven tray - they really can spread wide depending on your butters, flours, oats ratios so plan ahead for that!
Sprinkle some salt on top of each cookie
Bake for 7 minutes then turn tray then another 7 minutes (14 total)
Cool on a wire rack for 10 minutes then devour thereafter with your favourite ice cream as a sandwich
