


2 cups couscous

2 1/2 cups boiling water (but use the method where you fill water to 1 inch or 1 thumb size above the cous cous!)

1 stock cube of choice

1 big pinch of salt

1 cucumber, diced

3 tomatoes, diced

1 huge bunch of herbs (parsley and mint best)

3/4 cup mixed seeds, toasted

1 bunch asparagus

5 cloves garlic

Olive oil, salt, pepper

5 salmon fillets (or do 4 if it’s a pack 1 can tuna or tofu instead!)

2 tsp each: salt, pepper, paprika, cumin powder, coriander powder

Dash of olive oil

1/2 cup olive oil

1/4 cup pomegranate molasses

1 big lemon or 2 small juiced

2 huge pinch’s salt - approx 1 Tbsp

1 Tbsp maple syrup

2 tsp Dijon mustard
Couscous with water, stock, salt to bowl and set aside for 20 minutes
Salmon and spices to airfryer 9 minutes 180c
Asparagus garlic and salt pepper olive oil to airfryer for 6 minutes 180c
Chop all the other veg
Toast the seeds in a dry pan
Shake dressing in a jar
Add everything except salmon together and mix
Serve or portion away!
Store in fridge once cooled and only take out of cooled environment when eating!
