3 red onions, thinly sliced

1 large bunch red radishes, thinly sliced

2 cups boiling water

1 cup white vinegar

1/2 cup white or castor sugar

1/4 cup salt

(Optional – I didn’t even both this time) Whole peppercors, Mustard seeds, rosemary stick, bay leaves for changing up the flavour
Paper towel
Boil water and dissolve the sugar and salt in a separate jug / bowl before adding vinegar
Add the liquid to the jar and if you don’t have enough to submerge all the onions and radish, then top up with more boiling water
Fold 4 paper towels into a small square and press on top to act as a lid (this step will make sure that your top layer of onions and radishes get the same pickling as what is completely submerged!)
Leave out until cooled and store in fridge after – for best colour and pickle, have after 1 day in fridge and keep for up to 2 weeks
