

5 tablespoons salted butter, at room temperature

3 cups all-purpose flour

2 teaspoons baking powder

1 1/2 teaspoons kosher salt
1 cup hot water
In a large bowl, mix together the flour, baking powder, and salt.
Add the butter and work it into the flour mixture with your fingers until crumbly.
Pour in hot water and stir until the dough comes together.
Knead a few times until smooth, then cover with a damp towel and let rest for 10–15 minutes.
Divide into 12 equal pieces and roll into balls.
Roll each ball out super thin, almost see-through.
Heat a skillet over medium and brush lightly with olive oil.
Cook each tortilla for 30–45 seconds per side until golden spots appear.
