


2 lb sirloin steak

1 tsp salt

1 tsp black pepper

1 tsp onion powder

1 tsp garlic powder

1/4 cup butter

5 garlic cloves, minced

1 tbsp Dijon mustard

2 tbsp fresh chives

2 tbsp fresh parsley

2 tsp smoked paprika

1/4 tsp red pepper flakes

1/4 tsp cayenne pepper

1 tsp garlic powder

1 tsp black pepper

Juice of 1/2 a lemon

Zest of 1/2 a lemon

2 lbs russet or yellow potatoes

1 whole head of garlic

1/2 cup heavy cream

1/4 cup melted salted butter
Roast garlic: Prep garlic head, drizzle with olive oil + salt, wrap in foil, and roast 40 minutes at 400°F.
Cook potatoes: Peel and chop potatoes, then boil in salted water until fork tender (about 15 minutes).
Season steak: Cut top sirloin into bite-sized cubes, toss with steak seasoning.
Cook steak: Heat skillet or griddle on high, sear steak bites until browned and cooked to your liking. Remove and set aside.
Make cowboy butter: In the same pan, melt butter. Add garlic, Dijon, herbs, paprika, cayenne, pepper flakes, garlic powder, and black pepper. Stir until fragrant. Toss steak back in to coat.
Finish potatoes: Mash boiled potatoes with roasted garlic, heavy cream, and melted butter until smooth and creamy. Season with salt + pepper to taste.
Serve: Spoon garlic mashed potatoes onto a plate, top with cowboy butter steak bites, top with more cowboy butter, and finish with a sprinkle of fresh chives
