1/2 red onion, sliced

roast potatoes at 425° for 20–25 min with olive oil + spices
cook beef: brown → add taco seasoning + splash of water. reduce heat and let simmer for 2-3 minutes
street corn: char corn → mix with sauce + toppings
pickle onions: mix + let sit 5–10 min
build your bowl: potatoes + beef + corn + avocado + onions
