


1 yellow onion

2 jalapeƱos

3 cloves garlic

2 russet potatoes (diced)

2 cans corn (15 oz)

1 tsp salt, pepper, paprika, cayenne pepper

3 cups broth

1 cup heavy cream
Cook the bacon in a pot until crispy, then remove it from the pot.
Add the chopped onion, jalapeƱos, garlic, and diced potatoes to the pot.
Stir in the two cans of corn and seasonings (salt, pepper, paprika, cayenne pepper).
Pour in 3 cups of chicken broth and let the mixture simmer for about 15 minutes until the potatoes are tender.
Remove some of the potatoes along with some of the broth and blend them until smooth, then add the blended mixture back into the pot to thicken the soup.
Finally, stir in 1 cup of heavy cream and serve the chowder topped with crispy bacon and green onion.
