


1 lb ground beef

1 yellow onion

4 cloves garlic

1 tbsp tomato paste

1/2 tsp salt, pepper

28 oz tomato sauce

4 cups beef broth

1 tsp oregano, red pepper flakes

6 - 8 lasagna noodles

1/2 cup heavy cream

1 cup ricotta

2 tbsp heavy cream

1/4 cup grated parmesan

Salt and pepper to taste
Cook 1 pound of ground beef until almost cooked through.
Add 1 chopped yellow onion, 4 minced cloves of garlic, 1 tablespoon of tomato paste, and salt and pepper to the beef.
Once the meat is cooked through, add 28 ounces of tomato sauce and 4 cups of beef broth.
Stir in 1 teaspoon of oregano and a teaspoon of red pepper flakes, then bring the mixture to a boil.
Break up 6-8 lasagna noodles and add them to the boiling soup.
Let the soup simmer for about 10 to 12 minutes.
While the soup is cooking, prepare the whipped ricotta by mixing 1 cup of ricotta, 2 tablespoons of heavy cream, 1/4 cup of grated parmesan, and salt and pepper to taste.
Once the soup is done, turn off the heat and stir in 1/2 cup of heavy cream.
Plate the soup and top with a scoop of the whipped ricotta and some basil.
