


4 eggs

1 1/2 cups small curd cottage cheese

1 1/2 TBSP honey, maple syrup, or sugar

1 1/2 tsp vanilla extract

Pinch of cinnamon

1 cup rolled oats (if you want thicker pancakes, add 1/4 cup of any type of flour)

1 1/2 tsp baking powder

1/2 tsp kosher salt
Blend everything together until smooth. Preheat a pan to medium/medium low heat. Cook each pancake on a buttered pan until golden brown and crispy. Note that these pancakes require a little more cook time than the average pancake to avoid being raw in the middle. Top with you favorite toppings and enjoy!!
