Prep the french fries by filling a bowl with ice water and soaking the potatoes for about 30 to 40 minutes to remove starch.
Cut up a full white onion and place it in a pot with a little olive oil, butter, and salt. Cook on low medium heat with the lid on for about 10 minutes.
Remove the lid and stir the onions every couple of minutes until caramelized.
In an oven-safe bowl, place the tomatoes with a little olive oil, balsamic vinegar, and salt. Roast in the oven at 400 degrees for about 40 minutes.
Prepare the burger patties by placing the meat in the fridge to keep it ice cold until grilling.
Roast garlic alongside the tomatoes if desired.
After drying off the french fries, coat them with a little olive oil, salt, and pepper. Air fry at 375 degrees for 10 minutes, then increase to 400 degrees for another 10 minutes.
Smash the burger patties down and season with salt and pepper before flipping them over and adding cheese.
Assemble the burger with the patty, caramelized onion, arugula seasoned with pepper, roasted tomatoes, roasted garlic, and a little mayo.
