


2 eggplants, diced

Olive oil

1 onion, chopped

1 garlic clove, minced

10 cherry tomatoes, halved

200 ml tomato sauce

Salt & black pepper

1 tbsp wine vinegar

1 tsp sugar
Bread of choice (rye, sourdough, baguette…)

Mozzarella, grated or sliced
Sauté the diced eggplant in a generous amount of olive oil until soft and golden.
Remove from the pan and set aside.
In the same pan, sauté the onion and garlic until translucent.
Add the cherry tomatoes and cook until softened.
Pour in the tomato sauce and mix well.
Return the eggplant to the pan.
Season with salt and pepper, add the vinegar and sugar, and simmer on low heat for about 5 minutes.
Spread the eggplant mixture generously over bread slices.
Top with mozzarella.
Bake at 200°C (390°F) for 7–8 minutes, until the cheese is melted and bubbly.
Serve hot.
