


2 large chicken breasts, cut in half lengthwise (4 thin cutlets)

1 1/2 cups all-purpose flour

2 eggs, beaten

1 1/2 cups panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp Italian seasoning

Salt and black pepper, to taste

Oil for frying

3 cups chopped romaine lettuce

1/2 cup mayonnaise

1/4 cup grated Parmesan cheese

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 garlic clove, minced (or 1/2 teaspoon garlic powder)

1 tablespoon lemon juice

2–3 tablespoons milk or water (to thin, if needed)

Black pepper, to taste

4 large croissants, sliced
Season chicken with salt and pepper. Dip into flour, beaten eggs, then coat with panko, Parmesan, garlic powder, and Italian seasoning mix. Heat a pan with olive oil over medium to medium-high heat , and cook chicken on each side for 3-4 minutes. You can also air fry at 400°F for 12–14 minutes , flipping halfway, until golden and crispy.
Whisk together mayonnaise, Parmesan, lemon juice, Dijon, Worcestershire, garlic, salt, and pepper.
Toss the chopped romaine with half of the Caesar dressing. Reserve the rest to layer on the croissants.
Toast the croissants lightly. Spread some Caesar dressing on both halves, then layer with crispy chicken, dressed romaine, shaved Parmesan, and black pepper. Top with avocado or tomato if desired.
