


1 red onion, thinly sliced

1/4 cup chopped fresh parsley

1 tbsp ground sumac

2 tbsp olive oil

juice from 1 lemon

1 tsp salt

Skirt Steak

Start by trimming the skirt steak if needed, then getting it covered in the marinade and in the fridge for 24 hours.
Pull the steak out to let ribs tart to warm up, and in the meantime we can make the sumac onions. Slice the onions using a mandolin, then combine in a mixing bowl with the parsley, sumac, olive oil, lemon juice, and salt. Mix well and refrigerate covered.
Remove the steak from the marinade, wipe off most of that marinade and pat dry. Heat up some beef tallow over medium high heat and add the steak in. Cook for 2-3 mins per side and pull at 115° internal. Remove and rest.
Toast some sourdough bread and covers the bottom slice with red pepper hummus before adding the crispy onions, steak, sumac onions, and then covering the top slice of bread with goat cheese. Enjoy!
